    The rice arrived in a sack as shown, also wrapped in a thin plastic bag. There were no instructions for how to cook the rice with the package, but from what I could discern from the internet the water to rice ratio was around 3.5 to 1. I had read several places that authentic Bomba rice could absorb a ratio of 4:1 But I was a bit skeptical.

    I made an authentic Valencia style mixed Paella. My plan was to use to 2 cups of rice and six cups of seasoned chicken broth, a ratio of 3:1 because it was raining outside and very humid. However, my large frying pan turned out to be just a bit too small for all the liquid, and I lost about a quarter cup to spillover. I cooked my paella till I could add more liquid but still wound up only adding about 5.25 cups (minus the spill amount = 5 cups). I stole a spoonful of rice from the top of the pan and it was perfect, so… I am very happy that I did not add the other three quarters of a cup of broth as it would have been too much. As it turned out next time I will only use just a tablespoon or two over 5 cups of liquid, as the rice was a bit wet.

    Of course as everyone knows humidity, altitude and other factors can have an effect on how the rice turns out. So you have to gauge your own situation. It was raining here today, so who knows what it will be like cooking this rice in the dead and dry hear of my southern California summer when the liquid evaporates faster. I am sure in August I will be using the full six cups or even more.

    As for the taste and texture, OMG – I love this stuff. This was my first time using it and I am seriously impressed. I cook a lot of rice. We just love rice and I have found all kinds of ways to make it. This stuff was perfect, not sticky, not gluey, the texture was awesome. The flavor, well I have to say that is up to what you put into it, but it did absorb all that I gave it and was great. I have no way to compare it to other paella rices yet, so trying to compare it to regular rice is like comparing apples to walnuts. But I have just ordered a cheaper 4 pack of rice from the same region I can only hope that it is as good. Hope this helps you!

    Bought this to make paella for a recent “around the world” dinner party. Cooked perfectly. Excellent flavor. Could also be used in place of your everyday long grain rice. It has a slightly oval shape when dry, but when cooked looks no different. Recommend.

    It soaks up a ton of fluid and turned a beautiful yellow from my seasonings. I used saffron and a touch of turmeric.

    It cooked gently in the pan and yielded a nice crust on the bottom of the pan.

    If you want to go all out and make some special paella I recommend this.

    The picture shows me just about to add the rice into my two skillets.
